Avocados are a fiber-rich, healthy source of fat. They’re high in folate, vitamin K, potassium and carotenoids. Avocados are extremely heart healthy too; they reduce inflammation, help control blood sugar and regulate insulin. Raw cacao tames the inflammatory flame, and is rich in magnesium and provides antioxidants!
Chocolate Avocado Pudding Recipe
Ingredients
- 4-5 large avocados, peeled and pit removed
- 1/2 cup organic 100% pure raw cacao
- 1-2 tsp. pure vanilla extract
- 1-2 Tbsp. raw, organic locally-grown honey
- Pinch of Celtic sea salt
Instructions: Blend the above ingredients in a food processor, Vitamix or high-powered blender. Serve immediately or chill in the refrigerator for 30-45 minutes.
Optional Add-ins:
- 1-2 tbsps. cacao nibs (for a crunchy texture)
- 1/2 tsp. unprocessed organic stevia (for more sweetness)
- 4-5 dates (for additional sweetness)
- 1/4 cup carrageenan-free coconut milk or almond milk (for a creamier texture)
Blend in or top with any of the following options (organic, of course!)
